JAPANESE TEA - SENCHA FUKAMUSHICHA CHIRAN

Available from 3 June

This spring sencha, called “Fukamushicha” because of the prolonged steaming it undergoes during processing, offers, with its broken needle-shaped leaves, a fresh, vegetal infusion with a pleasant umami flavour and notes of steamed vegetables.

ORIGIN:

• Region: Kagoshima Prefecture, in the Chiran area.
• Harvest: Early May 2020, spring harvest
• Special feature: A Japanese green tea is called Fukamushicha when it undergoes prolonged steaming. The leaves are consequently much more broken and the colour of the liquor more intense. Here we have a blend of the Yutakamidori and Kanayamodori cultivars. The region’s ancient volcanoes provide fertile soil which, together with dense mist and wide temperature variations, contributes to the quality of the teas produced.TASTING NOTES:
• Dry leaves: Broken needle-shaped leaves
• Attack: Fresh and vegetal, more powerful than traditional senchas

Heart: Steamed vegetables

• Finish: An umami flavour that envelops the palate and a light astringency that gives a good length on the palate.
• Aromatic families: vegetal
