Tea doesn't "go off", but it fades. Four enemies are enough to dull a grand cru within a few weeks: light, air, moisture and odours.
Light discolours the leaves and breaks down the aromas: banish glass jars displayed on a shelf, however pretty they may be.
Air oxidises. Choose an airtight tin, and the right size: a half-empty tin already traps a lot of air.
Moisture is the deadly enemy: never store tea above the kettle or the dishwasher. A dry cupboard, away from the hob, is perfect.
Odours, finally: tea is a sponge. Keep it away from coffee, spices and soap. That is also why our original lacquered metal tins remain the best home for it – allow 12 to 18 months for a flavoured tea and up to 2 years for a pure tea.
